Irresistible chicken salad with homemade Aioli mayo, sun-dried tomatoes, olives, and thyme. Perfect for sandwiches or over romaine lettuce. Customize with bacon, red onion, sage, or red wine vinegar for your own twist.
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 1 cup sliced black olives
  • 1 cup finely chopped sun-dried tomatoes in olive oil
  • 2 egg yolks
  • 1 cup olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon lemon juice, or to taste
  • 1 pinch salt, or to taste
Instructions:
  • Place the chicken breasts in a saucepan and cover them with water. Bring to a boil, cover, and let simmer for 20 minutes until cooked through. Drain and allow to cool.
  • As the chicken poaches, combine egg yolks and garlic until light in color. Slowly whisk in olive oil until fully mixed. Add lemon juice and salt to taste for a delicious aioli sauce.
  • Dice the chicken and add it to a salad bowl. Mix in the olives, sun-dried tomatoes, and thyme. Add 3/4 cup of aioli and toss until everything is well coated. Adjust seasoning to taste. Serve right away or chill. Enjoy with an indulgent groan.
