Gourmet chicken salad with juicy grapes, perfect for stuffing in croissants or bread. Ideal for picnics and summer lunches.
Ingredients:
  • 2 (12 ounce) cans chicken breast chunks, drained
  • 4 stalks celery, chopped
  • 1.5 cups red seedless grapes, halved
  • 0.5 onion, chopped
  • 2 tablespoons chopped fresh dill
  • salt and pepper to taste
  • 0.75 cup mayonnaise
  • 2 tablespoons distilled white vinegar
  • 8 croissants, split
Instructions:
  • Combine the broken chicken breast pieces with grapes, celery, and onion in a large bowl. Season the mixture with dill, salt, and pepper.
  • In a small bowl, combine mayonnaise, sugar, and vinegar until sugar dissolves. Mix the dressing with the chicken until well combined. Chill for 30 minutes, then spread the salad on croissants to make sandwiches.
