Chicken salpicao sub

Elevate your sandwich game with a Brazilian-inspired Salpicão salad sub, complete with crunchy ready-salted crisps for a delicious twist on a classic!
Ingredients:
  • 4 ripe tomatoes
  • 1 lime
  • 1 small red onion
  • extra virgin olive oil
  • 300 g free-range cooked chicken
  • 2 tablespoons mayonnaise made with free-range eggs
  • 75 g fat-free Greek yoghurt
  • 1 handful of black olives (stone in)
  • 30 g raisins
  • 2 eating apples such as Braeburn
  • 50 g watercress
  • 2 large subs or 4 rolls
  • salted crisps
Instructions:
  • Chop the tomatoes into a variety of sizes and place in a bowl. Season with sea salt and black pepper, then add half of the lime juice. Peel and finely slice the onion, then mix it with the tomatoes. Drizzle in 1 tablespoon of oil and toss everything well. Set aside. Shred the chicken in a large mixing bowl. Add mayo, yogurt, and lime zest. Pit and chop the olives, then mix them with raisins and add to the chicken. Slice and core the apples into rounds using a mandolin or knife. Combine with watercress and remaining lime juice. Open the rolls, spread with tomato salsa, add chicken mixture, apple slices, and watercress. Optionally, add crisps and top with the other half of the roll. Cut large subs in half if needed. Enjoy your meal!
