Elevate classic chicken sandwiches with our quick white bean pesto spread. Ready in just 20 minutes!
Ingredients:
  • 1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
  • 1 clove garlic, finely chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon basil pesto
  • Salt and black pepper
  • 16 slices multigrain or whole grain bread
  • 1 cup White Bean and Pesto Spread
  • 4 cooked boneless skinless chicken breasts, sliced
  • 16 romaine lettuce leaves, torn in half
Instructions:
  • Combine cannellini beans, garlic, lemon juice, olive oil, and basil pesto in a food processor. Pulse on-and-off until mixture is smooth. Season with salt and pepper to taste. Transfer the creamy mixture to a medium bowl, cover with plastic wrap, and refrigerate until needed.
  • Spread each slice of bread with the luscious 1 tablespoon White Bean and Pesto Spread. Layer the savory chicken on 8 slices and the crispy lettuce on the other 8 slices. Assemble the sandwiches by placing the lettuce-filled slices on top of the chicken-filled ones. Finally, slice the sandwiches in half for perfect portions. Enjoy!
