Cheesy chicken sandwich with chipotle mayo on crispy sourdough.
Ingredients:
  • 2 teaspoons olive oil
  • 4 skinless, boneless chicken breast halves
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lime juice
  • 0.5 teaspoon white sugar
  • salt and ground black pepper to taste
  • 1 green onion, chopped
  • 1 clove garlic, minced
  • 0.5 teaspoon dried oregano
  • 0.33333334326744 cup light mayonnaise
  • 1 tablespoon canned chipotle peppers in adobo sauce, seeded and minced
  • 1.5 tablespoons chopped green onion
  • 1.5 tablespoons sweet pickle relish
  • 8 slices sourdough bread
  • 4 slices mozzarella cheese
  • 1 cup torn lettuce
Instructions:
  • In a large skillet over medium heat, pan-fry chicken breasts in olive oil until golden and cooked through, approximately 10 minutes per side.
  • Season chicken breasts with a flavorful mix of red wine vinegar, lime juice, sugar, salt, black pepper, green onion, garlic, and oregano. Pan-fry until green onion is tender, about 5 minutes per side. Transfer chicken to a plate and keep it warm.
  • In a blender, combine light mayonnaise and chipotle pepper until creamy. Transfer to a bowl and mix in 1 1/2 tablespoons of chopped green onion and sweet pickle relish.
  • Achieve a crispy golden brown exterior on sourdough bread slices.
  • Create mouthwatering sandwiches by stacking 4 bread slices with 1/4 cup of crisp lettuce, a tender chicken breast, and 1 slice of gooey mozzarella cheese on each. Slather the remaining slices with zesty chipotle mayonnaise, then cap off the sandwiches. Enjoy the melty goodness while it's still warm.
