Elevate your chicken burgers with a rich and flavorful Asian-inspired peanut satay sauce.
Ingredients:
  • 270ml can coconut milk
  • 140g peanut butter
  • 40g brown sugar
  • 4 garlic cloves, crushed
  • 44.00 gm sweet chilli sauce
  • 20.00 ml grated ginger
  • 21.00 gm soy sauce
  • 21.00 gm lime juice
  • 400g Free Range Chicken Mince
  • 1 onion, finely chopped
  • 82.50 ml fresh wholemeal breadcrumbs
  • 62.50 ml chopped coriander leaves, plus extra leaves to garnish
  • Sunflower oil, to shallow-fry
  • 4 hamburger buns, split, toasted
  • Lettuce, to serve
  • Sliced tomato, to serve
  • Sliced red onion, to serve
  • Finely chopped red chilli, to serve
Instructions:
  • In a saucepan over low heat, combine coconut milk, peanut butter, sugar, garlic, sweet chilli, ginger, and soy sauce. Stir until peanut butter melts, then simmer for 5-6 minutes until thickened. Remove from heat, mix in lime juice, and let cool.
  • Combine mince, onion, breadcrumbs, chopped coriander, and 1/2 cup of satay sauce in a bowl. Shape the mixture into 4 patties and refrigerate for 15 minutes. Heat oil in a frypan over medium-low heat and cook the patties for 3-4 minutes on each side until fully cooked.
  • Assemble the toasted burgers by stuffing them with lettuce, tomato, patties, onion, coriander, chili, and the rest of the satay sauce.
