Tasty marinated skewers inspired by South-East Asia, perfect for snacking or as a meal served with rice, fresh cucumber, and a delicious peanut sauce.
Ingredients:
  • 1 lemongrass stem, trimmed, outer layers removed, chopped
  • 5.00 gm ground cumin
  • 20.00 ml ground coriander
  • 1 tsp ground turmeric
  • 20.00 ml finely grated palm sugar (see note)
  • 36.40 gm peanut oil, plus extra for basting
  • 600g chicken breast, cut into 2cm cubes
  • Peanut sauce (see related recipe), to serve
  • Cucumber wedges, to serve
Instructions:
  • Crush lemongrass into a paste using a mortar and pestle. Combine it thoroughly with spices, sugar, and oil. Coat chicken in the paste in a glass or ceramic dish, cover, and refrigerate for at least 3 hours, or overnight for best results.
  • Soak approximately 18 wooden skewers in boiling water for 10 minutes to prepare them for grilling.
  • Skewer 5 pieces of chicken onto each skewer.
  • Preheat a barbecue or large chargrill over medium-high heat. Cook skewers in batches, turning and regularly basting with extra oil, until chicken is cooked through and slightly charred, about 8-10 minutes. Serve with sauce and cucumber on the side.
