Spring entertaining with BBQ – try this quick and delicious recipe!
Ingredients:
  • 400g can coconut milk
  • 45g (1/4 cup, lightly packed) brown sugar
  • 63.00 gm light soy sauce
  • 20.00 gm Traditional Curry Powder
  • 1 tsp turmeric
  • 12 (about 600g) chicken tenderloins, fat trimmed.
  • 200g jar crunchy peanut butter
  • 21.00 gm fresh lime juice
Instructions:
  • In a large glass or ceramic dish, mix together coconut milk, sugar, 2 tablespoons soy sauce, curry powder, and turmeric. Add chicken and coat well. Cover and refrigerate for 4 hours or overnight to marinate.
  • Separate chicken from marinade. Skewer the chicken. Pour the marinade into a saucepan. Mix in peanut butter and 1 tablespoon light soy sauce. Bring to a boil over high heat, then simmer over medium heat, stirring frequently, for 5 minutes until sauce thickens. Add lime juice.
  • - Preheat a sizzling chargrill or barbecue to high heat. Grill the chicken skewers for 2-3 minutes on each side until perfectly cooked. Plate them up and generously drizzle with the satay sauce, then garnish with fresh coriander leaves for a delightful presentation.
