Quick and delicious chicken satay ready in just 35 minutes from start to finish - a perfect meal in a hurry!
Ingredients:
  • 500g Australian Chicken Thigh Fillets, trimmed, coarsely chopped
  • 485g jar Satay Simmer Sauce
  • 2 x 150g pkts broccoli & cauliflower florets
  • 2 x 250g pkts Uncle Ben’s Coconut Rice
  • 2 spring onions, thinly sliced
Instructions:
  • Spritz a large saucepan with olive oil spray over medium heat. Brown the chicken in 2 batches, flipping occasionally, until golden for about 4 minutes. Then, transfer to a plate.
  • Combine satay sauce and 2 tablespoons of water in the pan. Stir well to mix. Add the chicken and cook on low heat for 10 minutes, stirring occasionally, until the chicken is cooked through.
  • Toss in the broccoli and cauliflower, then sauté for an additional 3 minutes until veggies are al dente.
  • While you wait, cook the rice according to the instructions on the packet.
  • Scoop the fluffy rice into individual serving bowls, generously layer on the savory chicken mixture, and finish with a sprinkle of fresh spring onion for a burst of flavor.
