Grill chicken skewers with delicious satay sauce. 🍢🔥
Ingredients:
  • 12 (about 600g) chicken tenderloins
  • 250ml (1 cup) satay marinade
  • Olive oil spray
  • 125ml (1/2 cup) coconut milk
  • 6.10 gm fish sauce
  • Steamed jasmine rice, to serve
  • 40g (1/4 cup) unsalted peanuts, coarsely chopped
  • 20.00 ml fresh coriander leaves
Instructions:
  • In a glass or ceramic bowl, combine chicken and marinade, ensuring even coating. Cover with plastic wrap and refrigerate for 10 minutes to marinate. Thread each piece of chicken onto skewers lengthwise after draining excess marinade.
  • Preheat a barbecue grill or large chargrill over medium heat. Lightly spray with olive oil. Place the skewers on the grill and cook for 5 minutes on each side, or until the chicken is fully cooked.
  • While you wait, combine the coconut milk and reserved marinade in a small saucepan over medium heat. Simmer and stir occasionally for 7 minutes until the sauce thickens. Add the fish sauce and mix well. Serve the rice on plates, top with skewers, drizzle with the sauce, and sprinkle generously with peanuts and coriander before serving.
