Savor the flavors of stir-fried Asian chicken and veggies served over seasoned ramen noodles in this quick and delicious weeknight meal.
Ingredients:
  • 1 (3 ounce) package ramen noodles with seasoning packet
  • 2 tablespoons sesame oil, divided
  • 8 ounces skinless, boneless chicken breast, diced
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce, divided
  • 1.5 cups frozen mixed vegetables
  • 2 teaspoons freshly grated ginger
  • 2 teaspoons minced garlic, divided
  • 0.5 teaspoon chili powder
Instructions:
  • Place ramen noodles in a bowl, reserving seasoning packet. Cover noodles with boiling water and let sit while you prepare the stir-fry.
  • In a hot pan, swirl 1 tablespoon of aromatic sesame oil for a flavorful base. Toss in the chicken to coat it luxuriously. Pour in oyster sauce and 1 tablespoon of soy sauce for depth of flavor. Stir-fry the chicken until perfectly cooked, about 7 to 10 minutes.
  • Toss in the frozen vegetables and cover. Reduce heat to medium and let them steam until tender, about 5 minutes. Stir in ginger and 1 teaspoon of minced garlic, and stir-fry until aromatic, around 1 minute. Serve in a bowl.
  • Strain the softened ramen noodles, saving 2 tablespoons of the soaking water.
  • In a pan over medium heat, heat the rest of the sesame oil. Mix in the reserved soaking water, 1/2 of the ramen seasoning, leftover soy sauce, remaining garlic, and chili powder. Add ramen noodles and stir until coated and the water has evaporated, about 2 to 3 minutes.
  • Serve in bowls and generously layer with the flavorful chicken and vegetable medley.
