20 Minute Chicken Teriyaki Noodles: Quick and delicious!
Ingredients:
  • 1 pound skinless, boneless chicken thighs, cut into bite-sized pieces
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 teaspoons sesame oil
  • 15 ounces wonton mein noodles (Canadian-style)
  • 4 cups frozen stir-fry vegetables, thawed
  • 0.33 cup low-sodium soy sauce
  • 0.25 cup mirin (Japanese sweet wine)
  • 0.25 cup sake (Japanese rice wine)
  • 2 tablespoons brown sugar
  • 5 cloves minced garlic
  • 1 teaspoon minced fresh ginger root
  • 1 pinch red pepper flakes
Instructions:
  • Season the chicken pieces generously with a mixture of salt and pepper.
  • In a large skillet over medium-high heat, sizzle the sesame oil. Toss in the chicken pieces and stir-fry until golden brown, about 3 to 5 minutes. Transfer the chicken to a plate and keep it cozy.
  • While eagerly waiting, start heating a pot of water over high heat until it reaches a lively boil. Add in the noodles and vegetables, cooking them until the noodles are tender, which should take approximately 3 minutes.
  • In a bowl, mix together soy sauce, mirin, sake, brown sugar, garlic, ginger, and red pepper flakes. Pour the flavorful sauce into the skillet and cook until thickened, about 3 minutes. Return chicken to the skillet and mix well.
  • Strain the noodles and vegetables, then mix them into the skillet. Stir well and plate for serving.
