Chicken Thigh Fricassee with Mushrooms and Rosemary

Indulge in tender chicken thighs cooked with mushrooms, garlic, and rosemary in white wine, served with crispy baguette.
Ingredients:
  • 4 tablespoons olive oil, divided
  • 5 ounces fresh mushrooms, sliced
  • 4 cloves garlic, peeled and halved
  • 2 tablespoons fresh rosemary, chopped
  • 1 pound chicken thighs
  • salt and freshly ground black pepper to taste
  • 0.25 teaspoon crushed red pepper flakes
  • 0.75 cup dry white wine
  • 12 cherry tomatoes
  • 12 Nicoise olives
Instructions:
  • In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add mushrooms and cook until they are tender. Transfer the mushrooms to a plate.
  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add garlic, rosemary, and chicken thighs to the hot oil. Season with salt and pepper. Cook, turning chicken, until chicken and garlic are nicely browned.
  • Add the mushrooms back to the skillet, sprinkle red pepper flakes over the chicken, then pour in white wine, deglazing the skillet with a wooden spoon. Let it simmer for about 3 minutes.
  • Lower the heat and gently simmer with a cover for 1 hour.
  • Spread a delightful mixture of tomatoes and olives evenly over the chicken. Cover and let it cook for an additional 5 minutes.
