Budget-friendly cannellini beans paired with salty capers and spicy chili for a flavor-packed dish.
Ingredients:
  • Olive oil spray
  • 1 small red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp crushed red chilli
  • 1 x 400g can no-added-salt chopped tomatoes
  • 1 x 400g can no-added-salt cannellini beans, rinsed, drained
  • 2 tsp salted baby capers, rinsed, drained, coarsely chopped
  • 40.00 ml chopped fresh continental parsley
  • 2 (about 250g each) chicken breast fillets, halved horizontally
  • Steamed green round beans, to serve
Instructions:
  • 1. Heat a saucepan over medium-low heat and lightly grease with olive oil spray. 2. Add onion and cook for 5 minutes until soft, stirring occasionally. 3. Stir in garlic and chili, cook for 1 minute until aromatic.
  • Place the tomato into the pot and crank up the heat to high until it boils. Lower the heat to a gentle simmer for 5 minutes. Introduce the cannellini beans and capers into the mix, then let it simmer until it thickens a bit. Add a sprinkle of pepper, then fold in half of the parsley.
  • Heat a large non-stick frying pan over high heat and coat with olive oil spray. Cook the chicken for 2-3 minutes on each side until golden and fully cooked.
  • Plate the chicken, generously spoon over the flavorful cannellini bean mixture, sprinkle with the fresh parsley, and accompany with a side of steamed green beans.
