30-Minute Chipotle Alfredo Chicken: A hearty and delicious dinner option.
Ingredients:
  • 2 cups uncooked penne pasta (6 oz)
  • 1 tablespoon olive oil
  • 1 lb boneless skinless chicken breasts, cut into 1/2-inch pieces
  • 2 cloves garlic, finely chopped
  • 1 chipotle chile in adobo sauce (from 7-oz can), finely chopped
  • 1 jar (16 oz) Alfredo pasta sauce
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Prepare pasta according to package instructions. Drain well.
  • In a 10-inch skillet, heat oil over medium-high heat. Cook chicken and garlic for 5 to 7 minutes until chicken is no longer pink in the center. Add chile and Alfredo sauce, cook for 2 minutes, stirring frequently.
  • Top the pasta with the flavorful chicken mixture and garnish with fresh cilantro for a burst of color and flavor.
