Chicken with Ginger Pesto

Poached chicken breasts in wine, served with a garlic-ginger green onion sauce resembling pesto. Serve warm or chilled.
Ingredients:
  • 2 pounds skinless, boneless chicken breast halves
  • 0.5 cup dry white wine
  • 0.25 cup vegetable oil
  • 2 tablespoons grated fresh ginger root
  • 2 cloves garlic, minced
  • 1 tablespoon salt
  • 1 teaspoon white sugar
  • 1 bunch green onions, cut into 1/4-inch pieces
Instructions:
  • Place chicken breasts in a saucepan with white wine and lightly salted water. Bring to a boil, then simmer for 8 to 10 minutes until cooked through. Let chicken cool in the broth, then set aside.
  • In a skillet over medium-low heat, gently warm the vegetable oil. Add ginger, garlic, salt, and sugar. Let it cook on low heat, stirring occasionally, until garlic is caramelized and oil is infused, around 20 minutes. Add green onions and cook for an additional 10 minutes until the white parts are tender, stirring occasionally.
  • Slice the poached chicken breasts diagonally into 1-inch wide pieces, then elegantly arrange on a plate. Drizzle the green onion mixture over the chicken and enjoy!
