Stuffed chicken breast with arugula and goat cheese, roasted to perfection.
Ingredients:
  • 4 chicken breasts (about 1 1/2 lbs total), tenders removed, breasts pounded thin
  • Ground black pepper
  • 1 large bunch arugula (about 4 ounces, trimmed)
  • 4 oz of soft goat cheese (chevre) broken into small pieces
  • 1-2 tablespoons butter or extra virgin olive oil
Instructions:
  • Prepare chicken breasts: Preheat oven to 425°F. Thinly pound the chicken breasts between plastic wrap until they are suitable for rolling.
  • Season chicken cutlets with salt and pepper. Place cutlets on a clean work surface, smooth side down, and top each with a layer of fresh arugula leaves and goat cheese pieces in the center.
  • Roll the chicken cutlets into a tight roulade from the narrowest ends and secure them with toothpicks to prevent unrolling.
  • Sear chicken roulades in hot oil until golden on all sides in a large cast iron pan or non-stick oven-proof skillet.
  • Bake until chicken is cooked through, about 10 to 12 minutes. Be cautious when handling the hot skillet and remove the chicken from the pan.
  • Cover the dish with foil and allow it to rest for 5 minutes. Remove the toothpicks from the chicken and slice the roulades into rounds before serving.
