Citrus-infused rice and oven-baked chicken with orange juice for a flavorful twist.
Ingredients:
  • 1 package (6.2 oz) fast-cooking long-grain and wild rice mix
  • 2 cups orange juice
  • 1/4 cup chopped pecans
  • 1 jar (2 oz) diced pimientos, drained
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/2 teaspoon paprika
Instructions:
  • Preheat oven to 350°F and grease an 8-inch square pan with cooking spray.
  • Combine rice, seasoning packet, orange juice, pecans, and pimientos in a pan. Top with chicken and sprinkle with paprika.
  • Cover the dish with foil and bake for 35 to 45 minutes, or until all the liquid is absorbed and the chicken juices run clear when the thickest part is cut (reaching 170°F).
