Chicken with Peppers and Artichokes

Delicious chicken and bell pepper dish with Progresso® marinated artichoke hearts.
Ingredients:
  • 1 jar (6 oz) Progresso™ marinated artichoke hearts, drained, marinade reserved
  • 1/3 cup dry white wine or chicken broth
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 2 medium red bell peppers, cut lengthwise into quarters
  • 4 medium green onions, sliced (1/4 cup)
  • 1/4 teaspoon pepper
Instructions:
  • Chill the artichokes. Combine reserved marinade and wine in a shallow glass or plastic dish. Add chicken and bell peppers, ensuring they are coated with the marinade. Cover and chill for at least 30 minutes, making sure to turn them occasionally, but not exceeding 24 hours.
  • Preheat gas or charcoal grill. Take out chicken and bell peppers from the marinade; keep the marinade aside. Place the chicken on the grill over medium heat. Cover and grill for 5 minutes. Flip the chicken, then add the bell peppers to the grill. Cover and grill for 10 to 15 minutes until the peppers are tender and the chicken juices run clear when the thickest part is cut (165°F).
  • After straining the marinade, combine it with artichokes, onions, and pepper in a 1-quart saucepan. Bring to a boil, stirring constantly, and cook for 1 minute. Serve alongside chicken and bell peppers.
