Grilled Chicken with Peppers and Artichokes

Simple yet sophisticated chicken with artichokes, peppers, and green onion.
Ingredients:
  • 1 jar (6 ounces) marinated artichoke hearts
  • 1/3 cup dry white wine or Progresso™ chicken broth (from 32-ounce carton)
  • 4 boneless skinless chicken breast halves (1 pound)
  • 2 medium bell peppers, cut lengthwise into fourths
  • 4 medium green onions, sliced (1/4 cup)
  • 1/4 teaspoon pepper
Instructions:
  • Separate artichoke hearts from marinade and store in the refrigerator. Combine marinade and wine in a shallow glass or plastic dish. Add chicken and bell pepper, ensuring they are well-coated in the marinade. Cover and refrigerate, turning occasionally, for a minimum of 30 minutes and a maximum of 24 hours.
  • Preheat grill for direct cooking.
  • Take the chicken and peppers out of the marinade, keeping the marinade aside. Grill the chicken and peppers on medium heat, flipping the chicken once, for a total of 15-20 minutes until the peppers are tender and the chicken is cooked through.
  • After straining the marinade, bring it along with artichoke hearts, onions, and pepper to a boil, stirring for 1 minute. Serve the flavorful artichoke sauce with chicken and peppers.
