Tropical Hawaiian chicken with sweet pineapple, tangy lemon, and savory soy sauce, cooked with peppers and onions in one skillet for an easy and delicious meal.
Ingredients:
  • 2 tablespoons canola oil
  • 1 medium onion, cut into 1/4-inch thick rings
  • 1 cup chicken broth
  • 1 (8 ounce) can pineapple chunks, undrained
  • 2 tablespoons lemon juice
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon cornstarch
  • 0.5 teaspoon dry mustard
  • 6 skinless chicken thighs
  • 1 small red bell pepper, cut into 1/4-inch rings
Instructions:
  • In a skillet over medium heat, sauté onion rings in canola oil for 3 minutes. Carefully pour in chicken broth, pineapple juice, and lemon juice, then bring to a boil.
  • Combine soy sauce, cornstarch, and dry mustard in a bowl. Pour into the skillet with the sauce, and stir until thickened and translucent, about 2 to 3 minutes.
  • Add chicken thighs to the flavorful sauce, ensuring they are fully immersed. Allow the mixture to simmer gently, stirring occasionally to ensure even cooking, until the chicken is fully cooked and the juices run clear, about 25-30 minutes. Use an instant-read thermometer to confirm the chicken has reached a minimum internal temperature of 165°F (74°C).
  • Simmer chicken with juicy pineapple chunks and vibrant bell pepper until tender, approximately 5 more minutes.
