Transport your taste buds to the tropics in just 3 easy steps with this quick weeknight dinner.
Ingredients:
  • 2 lb boneless skinless chicken thighs
  • 1 to 2 cloves garlic, finely chopped
  • 1 1/2 cups honey bbq sauce
  • 1 can (20 oz) pineapple chunks, drained and 1/4 cup liquid reserved
  • 1 small red bell pepper, cut into 1-inch pieces
  • 1 small yellow bell pepper, cut into 1-inch pieces
  • 2 tablespoons cornstarch
  • 3 cups cooked rice
  • Chopped fresh parsley, if desired
Instructions:
  • Lightly coat a 4- to 5-quart slow cooker with cooking spray, then add the chicken thighs.
  • Sprinkle with aromatic garlic and savory sauce, then delicately place pineapple chunks on top. Drizzle with 1/4 cup of the reserved liquid for added flavor.
  • Seal and cook on High for 3 hours or Low for 5 hours. Add bell peppers for the last 30 minutes of cooking. Blend cornstarch and 1/4 cup water in a small bowl. Mix into the slow cooker, cover, and cook on High for the remaining time.
  • Garnish with fluffy rice and fresh parsley.
