Tender beef meatballs in sweet pineapple sauce - a taste of Hawaii made easy in a slow cooker.
Ingredients:
  • 0.75 cup crushed soda crackers
  • 0.25 cup finely chopped onion
  • 2 tablespoons milk
  • 1 clove garlic, crushed
  • 1.25 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground ginger, or more to taste
  • 1.5 tablespoons cornstarch, or as needed
  • 1.5 tablespoons water, or as needed
  • 1 (14 ounce) can crushed pineapple, with juice
  • 1 cup brown sugar
  • 0.5 cup vinegar
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and elegantly line a baking sheet with shiny aluminum foil.
  • Combine ground beef, crushed soda crackers, onion, eggs, milk, garlic, salt, pepper, and ginger in a large bowl until thoroughly mixed. Form into 1- or 1 1/2-inch balls and arrange on a baking sheet.
  • Bake until golden brown in the preheated oven for approximately 15 minutes.
  • In a saucepan, simmer pineapple along with its juice, brown sugar, vinegar, and soy sauce over medium-high heat. Stir occasionally and bring to a boil. In a separate bowl, mix cornstarch and water, then gradually add to the boiling sauce until it thickens slightly.
  • Arrange meatballs in the cozy embrace of a slow cooker, then lovingly drizzle them with the luscious pineapple sauce.
  • Slow cook until the meatballs are fully cooked through and soaked in the delicious sauce, approximately 4 to 5 hours.
