Tropical Hawaiian pulled pork: Slow-cooked in a sweet pineapple, brown sugar, and soy sauce glaze.
Ingredients:
  • 1 (20 ounce) can pineapple chunks in juice
  • 0.333 cup brown sugar
  • 0.25 cup low-sodium soy sauce
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 0.5 teaspoon ground ginger
  • 1 (3 pound) pork butt roast
Instructions:
  • Combine pineapple chunks, brown sugar, soy sauce, onion, garlic, pepper flakes, ginger, and black pepper in a bowl, stirring well.
  • Cut the pork butt into quarters and place in a slow cooker, then pour the pineapple mixture over the top.
  • Slowly simmer the pork until it's tender and effortlessly pulls apart with a fork, in a span of 6 to 8 hours.
  • Shred the flavorful pork in its savory juices before serving.
