Family-friendly sweet and sticky chicken dish everyone will love.
Ingredients:
  • 125ml (1/2 cup) fresh pineapple juice
  • 41.60 gm tomato sauce
  • 42.00 gm soy sauce
  • 42.90 gm honey
  • 20.00 ml fresh ginger, finely grated
  • 2 garlic cloves, crushed
  • 2.50 gm ground cumin
  • 1/4 tsp dried chilli flakes
  • 1 lime, rind finely grated, juiced
  • 4 (about 1.2kg) chicken marylands, excess fat trimmed
  • 3 small (about 530g) sweet potatoes, scrubbed, cut into wedges
  • 1 large red onion, cut into wedges
Instructions:
  • Preheat the oven as directed. In a small saucepan over medium heat, mix pineapple juice, tomato sauce, soy sauce, honey, ginger, garlic, cumin, chili, 1⁄2 tsp lime rind, and 1 tbs lime juice. Simmer for 6-7 minutes until slightly thickened.
  • Heat a large flameproof roasting pan over medium-high heat. Spritz the chicken with olive oil, season, and cook, turning occasionally, for about 5 minutes until nicely browned.
  • Place sweet potato and onion in the pan, then pour the pineapple mixture over them. Roast for 35 minutes, basting twice with pan juices, until chicken is cooked through and caramelized. Sprinkle with the remaining lime rind before serving.
