Elevate roast chicken with a fragrant pine nut stuffing for a unique twist.
Ingredients:
  • 56.88 gm olive oil
  • 150g baby spinach leaves, chopped
  • 1.7kg whole chicken
  • 20.00 ml thyme leaves
  • 500.00 ml fresh multigrain breadcrumbs
  • 62.50 ml toasted pine nuts
  • 1.5kg mixed vegetables (such as potatoes, parsnip and carrots)
Instructions:
  • Preheat the oven to 220°C. Heat 1 tablespoon of oil in a skillet over medium-high heat. Sauté garlic and onion, stirring frequently, for 4 minutes until softened. Then, add spinach and cook for an additional 1 minute. Allow to cool.
  • Rinse the chicken meticulously, then thoroughly pat dry inside and out with paper towels. Season the cavity with salt and pepper, and massage the skin with 1 tablespoon of oil, salt, and pepper.
  • Prepare the flavorful stuffing by mixing thyme, breadcrumbs, cooled spinach mixture, nuts, salt, and pepper until well combined. Carefully loosen the skin from the chicken breasts and stuff 1/3 cup of the mixture under the skin, massaging it evenly. Fill the chicken cavity with the rest of the stuffing and tie the legs together using cooking string.
  • - Put the chicken in a roasting pan, breast-side up, and surround it with the vegetables. - Brush everything with the remaining oil. - Roast in the oven for 1 hour until the chicken juices run clear and vegetables are crisp-tender. - Take it out of the oven, cover with foil, and let it rest for 10 minutes. - Serve the chicken with the vegetables.
