Delicious family-friendly Chicken with red capsicum, feta, and basil - simple, fast, and nutritious.
Ingredients:
  • 100g Greek feta cheese
  • 500g chicken thigh
  • 125.00 ml fresh basil leaves
  • 1/2 small red capsicum, cut into thin strips
  • 600g chat potatoes, quartered
Instructions:
  • Preheat your oven to 200C/180C fan-forced and lightly grease a shallow ceramic baking dish.
  • Slice 60g of feta into thin strips. Place 1 chicken fillet, smooth side down, on a chopping board. Layer one-quarter of the basil, feta, and capsicum over the chicken. Roll up the chicken to seal in the filling. Secure with toothpicks and place it seam-side down in the prepared dish. Repeat the process with the remaining chicken, basil, feta, and capsicum.
  • Add chunks of flavorful potato to dish and generously drizzle with oil. Sprinkle remaining creamy feta over succulent chicken and season with a perfect balance of salt and pepper.
  • Roast until the chicken is cooked through and the potatoes are tender, about 35-40 minutes. Serve hot.
