Spicy ginger and aromatic cloves make this Asian-inspired stir-fry irresistible.
Ingredients:
  • 12 (about 1.8kg) chicken thigh fillets, cut into 2cm pieces
  • 20.00 ml finely grated fresh ginger
  • 2 tsp Chinese five spice
  • 1/2 tsp ground cloves
  • 60ml (1/4 cup) tamari (wheat-free soy sauce)
  • 60ml (1/4 cup) fresh lemon juice
  • 40.00 ml rice wine vinegar
  • 40.00 ml sesame oil
  • 36.80 gm vegetable oil
  • 1 bunch green shallots, ends trimmed, cut into 8cm lengths
  • Steamed jasmine rice, to serve
Instructions:
  • Mix the chicken with ginger, garlic, five spice, cloves, tamari, lemon juice, vinegar, and sesame oil in a bowl. Let it marinate in the fridge for 1 hour.
  • Drain the chicken, saving the marinade. Heat a quarter of the vegetable oil in a wok over high heat. Stir-fry the shallot for 1 minute, then set it aside on a plate. Stir-fry a quarter of the chicken for 3-4 minutes. Transfer it to a bowl. Repeat this process with the remaining oil and chicken in 3 more batches.
  • Pour the marinade into the wok and bring it to a boil. Simmer for 2-3 minutes until the sauce thickens, then drizzle it over the chicken.
  • Plate the chicken and shallots, then serve alongside a bed of rice.
