"Seal in juices and flavors with paper parcels for an effortlessly impressive meal presentation."
Ingredients:
  • 4 (150g each) chicken thigh fillets, trimmed
  • 400g can cannellini beans, drained, rinsed
  • 1/2 small red onion, finely chopped
  • 2 garlic cloves, thinly sliced
  • 20.00 ml finely chopped fresh oregano leaves
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 62.50 ml chopped fresh basil leaves
  • 40.00 ml white wine vinegar
  • 40g butter, melted
Instructions:
  • Preheat oven to 200°C/180°C fan-forced. In a hot frying pan, sear chicken for 1 minute on each side until golden brown.
  • Mix together beans, onion, garlic, oregano, parsley, basil, vinegar, and half of the butter in a bowl. Place a portion of the bean mixture in the center of one piece of parchment paper, then place a chicken thigh on top. Finish by drizzling with the remaining butter.
  • Fold 2 pieces of baking paper up towards the center, seal them by folding, then roll the ends to enclose the filling and tuck them under to secure. Place each parcel on a baking tray and repeat this process with the remaining baking paper, bean mixture, chicken, and butter.
  • Bake until perfectly cooked, for about 20 to 22 minutes. Serve and enjoy!
