Create a delicious gourmet meal for your family with this elegant white wine and mustard chicken dish.
Ingredients:
  • 20g butter
  • 2 eschalots, finely chopped
  • 23.40 gm wholegrain mustard
  • 125.00 gm dry white wine
  • 127.50 gm chicken style liquid stock
  • 200mls pure cream
  • 18.20 gm olive oil
  • 4 chicken breast fillets, trimmed
  • Roasted chat potatoes, to serve
  • Sauteed spinach, to serve
Instructions:
  • In a saucepan over medium heat, melt butter until bubbling. Add eschalots and cook, stirring occasionally, until tender. Pour in mustard and wine, bringing it all to a boil. Lower the heat and let it simmer until the liquid reduces by two-thirds, about 5 minutes.
  • Pour in the stock and simmer until reduced by half. Stir in the cream and simmer until slightly thickened.
  • Heat oil in a large frying pan until it shimmers. Brown chicken for 6 to 7 minutes on each side until fully cooked. Slice chicken thickly. Plate chicken, potatoes, and spinach. Drizzle with sauce before serving.
