Chicken wontons in spicy soup

Create delicious and versatile Chinese wonton dishes loved by both kids and adults!
Ingredients:
  • 125g broccoli, cut into florets
  • 75g snow peas, trimmed
  • Salt-reduced soy sauce, to serve
  • Coriander leaves, to serve
  • Lime wedges, to serve
  • 250g chicken mince
  • 2 green onions, thinly sliced
  • 40g water chestnut
  • 21.00 gm salt-reduced soy sauce
  • 5.00 gm cornflour
  • 28 fresh wonton wrappers
  • 1530.00 gm salt reduced chicken stock
  • 2 small red chillies, deseeded, thinly sliced
  • 2 garlic cloves, crushed
  • 42.00 gm lime juice
  • 36.60 gm fish sauce
  • 8.00 gm brown sugar
  • 125.00 ml fresh coriander leaves
Instructions:
  • To prepare wontons, combine mince, onion, water chestnut, soy sauce, and 1 teaspoon cornflour in a bowl. Season with pepper and mix well. In a separate cup, whisk together the remaining cornflour and 1 tablespoon warm water. Scoop 1 heaped teaspoon of mince mixture onto the center of a wrapper. Brush the edge with the cornflour mixture, fold over to enclose the filling, and press the edge to seal. Repeat this process with the remaining mince mixture, wrappers, and cornflour mixture.
  • For a flavorful spicy soup, start by bringing your stock to a boil in a saucepan on high heat. Add in chili, garlic, lime juice, fish sauce, and sugar. Lower the heat to medium and drop in the rest of the wontons. Let it simmer for 5 minutes while stirring occasionally until the wontons are cooked. Finish off by stirring in some fresh coriander. When serving, garnish with coriander leaves and lime wedges.
