Ingredients:
  • 1L (4 cups) chicken style liquid stock
  • 80ml soy sauce
  • 2 star anise
  • 4 slices fresh ginger
  • 350g packet frozen prawn wontons (see note)
  • 2 baby bok choy, sliced thickly
  • 1 long red chilli, seeds removed, thinly sliced
  • 125.00 ml coriander leaves
Instructions:
  • In a saucepan, combine the stock, soy sauce, star anise, and ginger with 2 cups (500ml) water. Bring to a boil, then let it simmer on low for 15 minutes until aromatic. Remove and discard the ginger.
  • Turn up the heat to medium and gently drop the wontons into the simmering stock. Let them float to the top, then cook for another minute before adding the bok choy. Cook for an additional minute or until the wontons are done and the greens are tender. Ladle the soup, wontons, and bok choy into bowls and garnish with sliced chilli and coriander before serving.
