Ingredients:
  • 225 g raw prawns, from sustainable sources
  • 1 spring onion
  • 1cm piece of ginger
  • 1½ teaspoon shaoxing wine or dry sherry
  • 3 tablespoons light soy sauce
  • ½ teaspoon white sugar
  • ½ teaspoon sesame oil
  • 24 fresh wonton wrappers (about 7cm square)
  • 1 tablespoon sichuan pepper
  • 3 tablespoons sea salt
  • 1 teaspoon dried chilli flakes
  • 40 ml vegetable oil
  • 20 ml light soy sauce
  • 20 ml rice wine vinegar
  • 1 pinch of sichuan seasoning
Instructions:
  • For the Sichuan seasoning, toast Sichuan pepper and 3 teaspoons of sea salt in a pan until fragrant. Let cool, then grind into a powder. To make the chili dressing, place chili flakes in a bowl. Heat oil until shimmering, then pour over the chili. Let stand for 30 minutes, strain, and mix with remaining dressing ingredients. For the wontons, mix prawn meat with spring onion, ginger, and other ingredients. Fill each wrapper with filling, seal, and shape into a ring. Boil the wontons for 2 minutes until cooked through. Serve the wontons topped with chili dressing and sprinkle with Sichuan seasoning. Enjoy immediately.
