Prawn wontons in ginger broth

Ingredients:
  • 500g medium green prawns, peeled, deveined, chopped
  • 3 green shallots, trimmed, finely chopped
  • 24 wonton wrappers
  • 2L (8 cups) boiling water
  • 2 vegetable stock cubes, crumbled
  • 5cm piece fresh ginger, peeled, cut into thin matchsticks
  • Pinch of salt
Instructions:
  • Combine the chopped prawns, green shallots, and garlic in a bowl, gently tossing until mixed well.
  • Lay 6 wonton wrappers on a clean surface. Add a teaspoon of prawn mixture in the middle of each wrapper. Fold the corners together, pinching to seal and create a pouch. Arrange them in a single layer on a plate. Repeat with the rest of the wrappers and prawn mixture to make 24 wontons.
  • In a large saucepan, bring the boiling water and stock to a boil over high heat. Reduce heat to medium, stir in ginger and soy sauce, and simmer uncovered for 5 minutes until fragrant.
  • Carefully add a few wontons at a time into the simmering broth using a spoon. Cover and bring to a boil. Uncover and cook for 2 minutes, stirring occasionally until the prawn wontons rise to the top. Season with salt to taste.
  • Transfer the wontons to small serving bowls using a slotted spoon, then generously ladle the hot broth over them. Serve immediately.
