Vietnamese chicken in wonton cups

Ingredients:
  • Vegetable oil, to grease
  • 3 200g pkts (30 sheets per packet) flour wonton wrappers
  • 1kg single chicken breast fillets
  • 80g (1/2 cup) peanuts
  • 100g (2 cups) bean sprouts, roughly chopped
  • 250.00 ml lightly packed fresh mint leaves, roughly chopped
  • 250.00 ml lightly packed fresh coriander leaves, roughly chopped
  • 60ml (1/4 cup) kecap manis (sweet Indonesian soy sauce)
  • 60ml (1/4 cup) fresh lemon juice
  • 60ml (1/4 cup) peanut oil
  • 2 long red chillies, finely chopped
  • 24.40 gm fish sauce
  • Pinch of salt
Instructions:
  • Preheat the oven to 180°C and lightly grease 24 mini 40ml (2-tablespoons) muffin pans with oil.
  • Press a quarter of the wonton wrappers into each muffin pan to line. Bake in preheated oven until golden brown and crisp, about 15 minutes. Allow to cool for 5 minutes. Carefully transfer wonton cups onto a wire rack to cool. Repeat with remaining wrappers in 3 batches, totaling 18 wrappers in the final batch.
  • Lay out the chicken fillets in two 25cm bamboo steaming baskets. Heat 5cm of water in a medium wok over high heat, then lower the heat to medium-high. Stack the baskets, ensuring the bottom one doesn't touch the water. Cover tightly and steam for 20 minutes, swapping the baskets halfway through. Once the chicken is just cooked through, transfer to a large plate and allow it to cool for 15 minutes. Refrigerate for 1 hour before serving.
  • Heat a small non-stick frying pan over medium heat. Cook the peanuts, stirring occasionally, until golden, for about 3 minutes. Remove from heat and let cool for 5 minutes, then roughly chop.
  • Dice the chilled chicken and transfer it to a spacious bowl. Combine with peanuts, bean sprouts, mint, coriander, kecap manis, lemon juice, peanut oil, chillies, and fish sauce. Toss gently until well mixed. Taste, and season with salt to your liking.
  • Scoop the flavorful chicken mixture into the crispy wonton cups for a picture-perfect presentation.
