Savory yaki udon stir-fry with udon noodles, tender chicken, and crisp veggies in a flavorful Japanese sauce.
Ingredients:
  • 6 ounces frozen udon noodles
  • 1 tablespoon olive oil
  • 0.5 pound boneless chicken breasts, cut into thin strips
  • 0.5 onion, sliced
  • 0.5 red bell pepper, sliced
  • 0.5 cup shredded cabbage
  • 0.5 cup carrot matchsticks
  • 1 teaspoon minced garlic
  • 2 tablespoons soy sauce, or more to taste
  • 1 tablespoon gochujang (Korean chile paste)
Instructions:
  • Bring a big pot of salted water to a boil. Boil udon noodles, stirring occasionally, until tender but still slightly firm, for about 10-12 minutes. Drain and rinse noodles under cold water.
  • In a large saucepan or wok over medium heat, heat olive oil. Add chicken and sauté for 3 to 4 minutes until cooked through. Stir in onion, bell pepper, cabbage, carrots, and garlic. Cook for an additional 3 to 4 minutes, keeping the vegetables crisp.
  • Drizzle soy sauce over chicken and veggies; sauté for an extra 1 to 2 minutes. Add udon noodles and mix thoroughly. Stir in gochujang and ketchup until all flavors are perfectly combined. Season with salt and pepper to taste.
