Whip up a speedy and effortless noodle dinner tonight!
Ingredients:
  • 250g dried soba or ramen noodles (see note)
  • 100ml reduced-salt soy sauce
  • 15.00 gm caster sugar
  • 1 tsp sesame oil
  • 36.40 gm peanut oil
  • 150g green prawns, peeled, deveined, chopped
  • 250.00 ml beansprouts
  • 250.00 ml shredded cooked chicken
  • 1 carrot, peeled, cut into thin matchsticks
  • 3 green onions, thinly sliced diagonally
  • 1/2 red capsicum, thinly sliced
  • 2 eggs, lightly beaten
  • 12.00 gm sesame seeds, toasted
Instructions:
  • 1. Bring a large saucepan of water to a boil, then add noodles. Cook for 3 minutes until just tender. Drain, rinse with warm water, and set aside.
  • In a microwave-safe jug, blend together soy sauce, sugar, and sesame oil. Microwave on high for 1 minute until hot. Stir well and set aside.
  • In a hot wok, sizzle peanut oil. Toss in prawns and stir until they turn pink, around 1 to 2 minutes. Include beansprouts, chicken, carrot, green onions, capsicum, and soy mixture. Stir-fry swiftly for 1 minute. Add noodles and mix everything well.
  • Drizzle beaten egg over noodles, gently stirring for 1 to 2 minutes until egg is just cooked. Distribute noodles among bowls, then garnish with sesame seeds. Enjoy!
