Spicy chicken and cabbage noodles - a flavorful twist on a traditional Japanese favorite.
Ingredients:
  • 2 tablespoons canola oil
  • 1 tablespoon sesame oil
  • 2 skinless, boneless chicken breast halves - cut into bite-size pieces
  • 2 tablespoons Asian-style chile paste
  • 0.5 cup soy sauce
  • 1 tablespoon canola oil
  • 0.5 medium head cabbage, thinly sliced
  • 1 onion, sliced
  • 2 carrots, cut into matchsticks
  • 2 pounds cooked yakisoba noodles
  • 2 tablespoons pickled ginger, or to taste
Instructions:
  • In a large skillet over medium-high heat, heat 2 tablespoons of canola oil and sesame oil. Sauté chicken and garlic until fragrant, about 1 minute. Add chile paste and continue cooking until chicken is browned, 3 to 4 minutes. Pour in soy sauce and simmer for 2 minutes. Transfer chicken and sauce to a bowl.
  • In a skillet over medium-high heat, sauté cabbage, onion, carrots, and salt in 1 tablespoon of canola oil until the cabbage is wilted, about 3 to 4 minutes.
  • Combine the chicken mixture with the cabbage mixture and mix well. Add the noodles and cook while stirring until the noodles are heated through and the chicken is cooked, about 3 to 4 minutes. Serve hot and garnish with pickled ginger.
