Whip up a quick and delicious Italian meal for your loved ones with chicken-asparagus rotini in tomato sauce in just 15 minutes!
Ingredients:
  • 2 2/3 cups uncooked whole wheat rotini pasta (8 oz)
  • 1 lb boneless skinless chicken breasts, cut into 1/4-inch strips
  • 1/2 teaspoon kosher (coarse) salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup 1-inch pieces fresh asparagus
  • 2 cups cherry tomatoes, cut in half
  • 2 tablespoons chopped fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup crumbled chèvre (goat) cheese (1 oz)
Instructions:
  • Prepare pasta according to package instructions, without adding salt or oil, then drain.
  • Prepare a 12-inch skillet by spraying it with cooking spray and heating it over medium-high heat. Season the chicken with salt and pepper. Cook the chicken and asparagus in the skillet for about 5 minutes, stirring regularly, until the chicken is cooked through.
  • In a sizzling skillet, quickly cook tomatoes and garlic for a burst of flavor. Remove from heat, then toss in pasta, basil, vinegar, and oil. Serve each portion with a generous sprinkle of cheese.
