Rotini with Chicken, Asparagus and Tomatoes

Whip up a quick and tasty chicken, asparagus, and tomato pasta skillet in just 15 minutes!
Ingredients:
  • 2 1/2 cups uncooked rotini pasta (8 oz)
  • 1 lb boneless skinless chicken breast, cut into 1/4-inch strips
  • 1/2 teaspoon kosher (coarse) salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup 1-inch slices asparagus
  • 2 cups cherry tomatoes cut in half
  • 2 cloves garlic, finely chopped
  • 2 tablespoons chopped fresh basil leaves
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1/4 cup crumbled goat cheese (1 oz)
Instructions:
  • Prepare pasta according to package instructions, without adding salt and oil, then drain.
  • Prepare a 12-inch skillet by spraying it with cooking spray and heating it over medium-high heat. Season the chicken with salt and pepper. Cook the chicken and asparagus in the skillet for 5 minutes, stirring occasionally until the chicken is cooked through. Add tomatoes and garlic, continue to cook and stir for another minute. Remove from heat and enjoy!
  • Combine the cooked pasta, fresh basil, vinegar, and olive oil into the chicken mixture, then finish off by sprinkling with cheese on top.
