Chicken-Asparagus Skillet Gratin

Creamy asparagus skillet dinner ready in just 20 minutes with fresh seasonal ingredients.
Ingredients:
  • 3 cups cubed day-old bread
  • 1 cup shredded white Cheddar cheese (4 oz)
  • 1/2 cup butter, melted
  • 1 bunch fresh asparagus spears, chopped (about 2 cups)
  • 1/2 finely chopped onion (1 medium)
  • 1/2 cup Gold Medal™ all-purpose flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 3 cups fat-free (skim) milk
  • 2 cups diced cooked chicken
Instructions:
  • Preheat the oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Combine cubed bread, cheese, and 1/4 cup of melted butter in a small bowl. Spread half of the bread-cheese mixture in a baking dish and save the other half for later.
  • Cook asparagus in a skillet until crisp-tender, then place it over the bread in the dish.
  • In the same skillet, sauté the onion in the leftover 1/4 cup of melted butter until caramelized. Mix in the flour, salt, and pepper, and cook for about 1 minute. Slowly pour in the milk while continuously stirring, cooking for about 5 minutes until the mixture is smooth and thickened.
  • Add the cooked chicken to the mixture and pour it over the asparagus. Sprinkle the remaining bread-cheese mixture evenly on top.
  • Bake for 25 minutes, or until the crumbs turn golden brown.
