Chicken-Rice Casserole

Try a delicious and effortless homemade chicken and rice casserole, packed with veggies for a hearty dinner.
Ingredients:
  • 1/4 cup margarine or butter
  • 1/3 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1 cup chicken broth
  • 2 cups cut-up cooked chicken
  • 1 1/2 cups cooked white rice
  • 3 ounces mushrooms, sliced (about 1 cup)
  • 1/3 cup chopped green bell pepper
  • 1/4 cup slivered almonds
  • 2 tablespoons chopped pimientos
Instructions:
  • Preheat oven to 350°F.
  • In a 2-quart saucepan over medium heat, melt the margarine until bubbly. Add flour, salt, and pepper, stirring constantly. Remove from heat and mix in the milk and broth. Heat the mixture to boiling while stirring constantly, then boil and stir for 1 minute. Add the remaining ingredients and enjoy!
  • Transfer the mixture into a 2-quart casserole dish or an 8x8x2-inch square baking dish without greasing. Bake without covering for 40 to 45 minutes until it's bubbly. If desired, top it off with a parsley sprig for garnish.
