"Crunchy vegetarian picnic sandwiches to impress."
Ingredients:
  • 200g green beans, topped
  • 40.40 gm sour light cream
  • 2 green shallots, trimmed, finely chopped
  • 1 celery stick, finely diced
  • 21.00 gm fresh lemon juice
  • 2.50 gm ground cumin
  • Salt & freshly ground black pepper
  • 8 slices wholemeal bread
Instructions:
  • Fill a medium saucepan with water and bring it to a boil. Add green beans and cook for 2 minutes until they are bright green and tender crisp. Drain the beans, rinse under cold water, and drain well again.
  • In a food processor, combine chickpeas and sour cream until smooth. Transfer the mixture to a medium bowl and add shallots, celery, lemon juice, coriander, and cumin. Mix thoroughly, then season with salt and pepper to taste.
  • Spread the flavorful chickpea mixture onto the bread slices. Top half of them with a layer of beans and cover with the remaining slices to make sandwiches. Finally, cut the sandwiches in half for a delicious bite-sized treat.
