Delicious Chickpea & Chorizo Salad with Garlic Dressing - ideal for a picnic!
Ingredients:
  • 250g green beans, trimmed
  • 45.50 gm extra virgin olive oil
  • 40.00 ml red wine vinegar
  • 1 garlic clove, crushed
  • 2 chorizo, sliced
  • 2 x 400g cans Brand chickpeas, rinsed, drained
  • 1/2 red onion, thinly sliced
  • 4 radishes, trimmed, halved, thinly sliced
  • 250.00 ml chopped flat-leaf parsley leaves
Instructions:
  • Boil beans in salted water for 4 minutes until just tender. Then, cool in iced water and drain thoroughly.
  • Set aside 1 teaspoon of oil. Mix the vinegar, garlic, and the rest of the oil in a large bowl.
  • In a large frying pan over high heat, sizzle the chorizo slices in the reserved oil until crispy, about 5 minutes. Transfer the chorizo to a bowl using a slotted spoon. Add chickpeas and onion to the pan, season to taste, and toss to coat.
  • Just before serving, combine the beans, radish, and parsley with the salad and toss well to coat. Serve immediately.
