Whip up a flavorful global dish in less than 30 minutes - you won't be disappointed!
Ingredients:
  • 500g chorizo
  • 200g marinated roasted capsicums (see note)
  • 2 x 400g cans chickpeas
  • 1/4 bunch flat-leaf parsley
  • 300g savoy cabbage
  • 2 eschalots
  • 1 granny smith apple
  • 1/2 lemon
  • 11.80 gm Dijon mustard
  • 20.00 ml white wine vinegar
  • 60ml (1/4 cup) extra virgin olive oil
Instructions:
  • Prepare the sausages by flattening them with your hands, which will help them cook faster. Cut each sausage into 3 pieces widthwise. Slice the capsicums into 12 wide strips. Thread 2 pieces of capsicum and 3 pieces of sausage alternately onto skewers to make 6 servings.
  • Preheat a chargrill or heavy-based frying pan over medium heat. Grill skewers, turning occasionally, for 8 minutes or until well-cooked.
  • Prepare the salad by draining and rinsing the chickpeas under running water. Transfer them to a large bowl, then add in the parsley leaves, shredded cabbage, sliced eschalots, and julienned apple.
  • Squeeze fresh lemon juice. Combine mustard, vinegar, and lemon juice in a small bowl, then slowly mix in oil. Add salt and pepper to taste. Drizzle the dressing over chickpea mixture and mix thoroughly.
  • Present the skewers alongside the salad.
