Colorful chickpea salad with veggies, edamame, cranberries, and sunflower seeds. Sweet & tangy.
Ingredients:
  • 2 cups shelled edamame (green soybeans)
  • 2 cups cooked chickpeas
  • 0.33333334326744 cup minced red onion
  • 0.33333334326744 cup minced red bell pepper
  • 0.33333334326744 cup minced carrot
  • 0.25 cup sunflower seeds
  • 0.25 cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
  • 0.33333334326744 cup olive oil
  • 0.33333334326744 cup honey
  • 0.33333334326744 cup apple cider vinegar
  • 2 tablespoons mayonnaise
  • 0.25 teaspoon celery salt, or more to taste
  • 0.125 teaspoon cayenne pepper, or more to taste
Instructions:
  • Combine the edamame, chickpeas, red onion, red bell pepper, carrot, sunflower seeds, dried cranberries, olive oil, honey, vinegar, mayonnaise, celery salt, and cayenne pepper in a large bowl.
