Spiced roasted chickpeas and edamame

Spiced chickpeas and edamame make a flavorful and versatile snack or accompaniment to any meal - a tasty anytime treat!
Ingredients:
  • 400g can chickpeas, rinsed, drained
  • 400g packet frozen edamame, thawed, podded
  • 2 tsp turmeric
  • 5.00 gm ground paprika
  • 5.00 gm ground cumin
  • Pinch cayenne pepper
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line 2 large baking trays with baking paper. Pat dry the chickpeas and edamame with paper towels to remove excess moisture. Combine them in a large bowl.
  • Coat with oil, then generously sprinkle with turmeric, paprika, cumin, and cayenne pepper. Ensure everything is evenly coated. Place on prepared trays, season with salt, and bake for 40 minutes until crisp and golden brown, tossing halfway through. Let cool completely on trays.
