Chickpea and vegie burgers

Try our delicious and nutritious chickpea and veggie burgers for a fantastic lunch option.
Ingredients:
  • 400g can chickpeas, drained, rinsed
  • 70g carrot
  • 165.00 ml wholegrain breadcrumbs
  • 2 eggs, lightly beaten
  • 9.20 gm olive oil
  • 4 round wholegrain rolls, halved crossways
  • 8 green oak lettuce leaves
  • 4 slices canned beetroot, drained
  • 220g tomato
Instructions:
  • In a bowl, combine chickpeas and mash them until nearly smooth using a fork. Mix in carrot, breadcrumbs, and egg until well combined. Shape the mixture into 4 patties using floured hands.
  • Heat oil in a frying pan over medium heat and cook the patties, turning once, until heated through, about 4 to 5 minutes per side.
  • Preheat grill to high. Toast cut side of rolls for 2 to 3 minutes or until golden. Place beetroot, lettuce, tomato, patties, and roll tops to assemble burgers. Serve and enjoy!
