Delicious chickpea panini with lemon, carrot, and goat cheese on a crispy baguette; perfect for kids and adults.
Ingredients:
  • 1 (15-ounce) can chickpeas
  • 2 tablespoons fresh lemon juice, plus more for assembling
  • 2 tablespoons extra virgin olive oil, plus more for assembling
  • 1/4 teaspoon ground cumin
  • 3 ounces soft goat cheese (chèvre)
  • 1 loosely packed cup grated carrot (from 1 medium carrot)
  • 1 (18-inch) baguette
  • 1 1/2 cups lightly packed arugula
  • Salt to taste
Instructions:
  • Prepare the chickpea filling by draining chickpeas in a colander, rinsing under cold water, then transferring to a bowl. Mix in lemon juice, olive oil, and ground cumin, mashing them with a fork until chunky and thick.
  • Combine the crumbled goat cheese and carrots in the bowl, then mix thoroughly.
  • Prepare the baguettes: Slice the baguette into 3 pieces measuring 5-6 inches each. Reserve any extra bread for another recipe. Cut each piece in half lengthwise without separating them completely, creating a hinge. Spread the chickpea mash evenly on each baguette piece. Top with arugula and drizzle with lemon juice, olive oil, and a pinch of salt. Serve immediately to enjoy the freshness of the bread.
