Chickpea Salad Sandwich

Whip up a quick and delicious vegetarian chickpea salad sandwich in just 15 minutes using pantry staples. Packed with fiber and protein for a satisfying lunch option.
Ingredients:
  • 1 (15 ounces) can chickpeas, rinsed and drained
  • 2 stalks celery, diced
  • 2 tablespoons capers, rinsed and drained
  • 3 tablespoons mayonnaise
  • 2 tablespoons lemon juice
  • 1/2 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • 2 pinches of black pepper
  • 4 slices sandwich bread
  • 1/2 avocado
  • 2 tablespoons roasted almonds, coarsely chopped
  • 2 to 4 tomato slices
  • Handful of watercress or other greens, such as lettuce, arugula, or spinach
Instructions:
  • Mash chickpeas in a medium bowl using a potato masher until coarsely mashed.
  • Prepare the filling by combining celery, capers, mayonnaise, lemon juice, and mustard in a bowl. Adjust seasoning with a pinch of salt and pepper to taste.
  • Create your sandwiches by laying 2 pieces of sandwich bread on a cutting board. Spread 1/4 mashed avocado on one slice of bread, season with a sprinkle of salt and pepper. Add a spoonful of the chickpea salad, 1 tablespoon of almonds, tomato slices, and greens of your choice. Finish with the second slice of bread. Repeat the process to make the second sandwich.
  • Slice the sandwich in half or keep it whole. Serve with chips or a side salad. For leftovers, use any extra chickpea salad the next day in a salad, with crackers, or on a slice of bread for a hearty snack.
